On a recent fall evening a dozen of us met with co-operator Mike to learn about fermenting beverages. First we boiled up a pot of herbs, fruits and a vanilla bean, then let it blow off steam while we wandered through the store speculating on what other concoctions we could invent. Some champagne yeast added to the brew promised a nominal yeast flavor and light carbonation. Mike brought his home siphoning apparatus, and the class bottled up a case each of root beer and vanilla creme soda to bring home. With instructions to watch for bubbles and avoid explosions. Next project, a home ginger beer for a gourmet version of a Dark and Stormy.
